My mom made this recipe earlier this fall, and it's delightful!
1 cooked chicken deboned (I use rotisserie chickens)
4 cups chicken broth
1 - 15oz. diced tomatoes
1 can enchilada sauce
1 can black beans
1 bag frozen corn
4 oz. green chilies
1 chopped onion
1 clove garlic
1 t. cumin; 1 t. chili powder; 1 t. salt
1/4 t pepper
1 bay leaf
Mix together and cook in crock pot.
Top with fresh cilantro, cheese, and tortilla chips
